Recipe: Nigerian Stew

What we call stew isn't stew in the 'stew with dumplings' sense. Stew for us is an accompaniment to many dishes.

Also worth mentioning about Nigerian cooking, it isn't an exact science, my recipe has the same ingredients as my mum's however it doesn't taste the same. You cook with soul - it's the Nigerian Way!

Ingredients

2 red bell peppers

1 can of tomatoes

1 onion

0.5 of a scotch bell chilli for moderate heat

0.5 pint of stock

Thyme & curry - sprinkle

Assorted boiled/fried meats

 

Method

Blitz the above except the seasoning & meat in a blender.

Pour into a pot and boil until most of the excess liquid has evaporated this will take about 30mins

In a different pan, heat up some oil (for a smokier taste try palm oil) pour the mix and fry for 2-5mins, add the meats & season.

Voila! Serve with rice or boiled yam!
