Recipe: Spaghetti and Fresh Pea Pesto with Broad Beans

This was a pretty quick easy recipe to follow. Dinner in four steps? Yes please!

Step 1: boil peas until tender, drain & transfer to food processor. Whizz up into a coarse paste

Step 2: add olive oil, garlic (we opted for the gia garlic in a tube),Parmesan (or Parmesan style veggie cheese) & whizz some more. Add almonds, pinch of sugar & seasoning - whizz.

Step 3: boil your shelled broad beans, leave to cool, cook spaghetti till al dente. Drain. Toss in broad beans.

Step 4: mix spaghetti & pesto. Enjoy your lovely meat free tasty meal!

 

The Verdict: I used too little Parmesan (20 instead if 100grams) so the result was perfect for hubby but on the dry side for me. Taste wise it was awesome! Did Ethan like it? Are you kidding, it's green. My son is avoiding foods that colour, thankfully I had some penne in the freezer for his highness ;-)
